For the paradeis soup with zucchini and coconut milk, finely dice the onion. Heat oil in a saucepan. Peel zucchini, remove seeds and cut into pieces. Sauté diced onion in oil (medium hot) and add zucchini pieces.

Peel and seed tomatoes if necessary and add to vegetables, pour in coconut milk and season. Let the soup simmer, after about 10 minutes puree and add the chopped beets, slice the small zucchini and also cook briefly.

Finally, season to taste if necessary. Fish out the lemongrass before serving.
