Vegetable Rice with Chicken Skewers

Instructions:

Sauté the shallots in olive oil, add the dry long grain rice and sauté until translucent. Next, fold in the paradeis pulp and extinguish with the poultry broth. Add the vegetables cut into strips, season with salt and pepper.

When the liquid comes to a boil, cover the pot with a lid and cook the vegetables in the oven at 180 °C (top/bottom heat) for about 15 minutes.

Cut the chicken breast into 4 cm cubes and put them on shish kebabs. Season with salt and bell pepper and dust with paprika powder.

Sear the skewers all around in a frying pan with olive oil and bring to the table with vegetable rice.

Tip: Zucchini are a type of pumpkin and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
