For the glazed chicken breast, pour the juice of 1/2 lemon over the chicken. Season with salt, pepper and chili and sear all around in hot clarified butter. Keep meat warm.

Deglaze roasting residue with wine and lemon juice. Place chicken breasts in a casserole dish and pour juice over them. In a saucepan, melt butter and sugar and brush chicken pieces with it. Roast at 170° for about 20-25 minutes, basting the glazed chicken breasts frequently.
