For the couscous salad to go, first put Fini’s Feinstes Couscous with curry powder, salt and 2 tablespoons olive oil in a bowl. Cover with boiling hot water to about 1 cm above the couscous and stir well once. Cover and let swell for about 5-10 minutes. Then gently loosen with a fork and let cool.
Stir marinade from 3 tablespoons olive oil, vinegar and lemon juice.
Cut tomatoes in half. Chop parsley. Peel cucumber and cut into strips with a peeler. Now layer marinade, tomatoes, couscous, parsley, burrata and cucumber in order in glasses and finish with cress.
Finally, drizzle the couscous salad to go with a little olive oil and finish with sea salt.
