For the strawberry habanero syrup, rinse and clean the strawberries, remove the green and chop the fruit. Sugar the strawberry mixture and place in a container to infuse for one night in the refrigerator.

The next day, add water and heat the strawberries.Slit the chili pepper, remove the seeds and finely chop the pod.

Add the rest of the sugar, the habanero and the juice of one lemon and stir until the fruit breaks down. If you want very fine syrup, stir with a hand blender.

Now reduce the temperature and let the syrup thicken.

Fill the still warm strawberry habanero syrup into disinfected bottles and close them. Store the bottles in a cool and dark place.
