For the apple-carrot soup, peel the carrots and cut into rough cubes. Also chop the spring onion, heat the oil in a soup pot and fry the carrot and spring onion pieces until they have taken color.

Now pour in the vegetable soup and simmer. In the meantime, peel the apple and remove the core. Dice the remaining pulp and add to the soup. When everything is cooked soft, season with ginger and lemongrass and puree the apple-carrot soup.
