Instructions:

Prepare: Remove chops from refrigerator a half hour before preparing. Score fat edge a few times.

Dry meat with kitchen roll. Preheat oven to 80 °C. Preheat platter and plate in it.

Brown: Heat clarified butter in a skillet until hot. Reduce temperature to medium. Sear chops in batches on both sides for 2-2 1/2 minutes each, season.

Finish cooking: Place chops on preheated platter. Cook for 40-50 min. in oven heated to 80 °C.

Chops can then be kept warm in 60 °C stove for up to 45 min.
