For the Beef Fillets with Port Wine Shallots, heat the clarified butter in a heavy skillet and sear the steaks in it for about 2 minutes on each side.

Remove steaks from pan, keep warm and let rest.

Peel shallots and sauté in the drippings. Pour in port wine and simmer uncovered for about 5 minutes until shallots are al dente.

Season sauce with salt and pepper, season with lemon juice and remove from heat. Stir in the cold butter in flakes and whisk to combine.

Arrange the beef fillets with port shallots on plates and drizzle with the sauce.
