Instructions:

For the must roast, rub the meat with salt and spices. Cover the roast with slices of bacon and wrap it in the pork net.

Put the roast in the oven preheated to 200° C and pour must over it. Cut the onions in half, lard with cloves and add to the meat.

Roast the must roast, turning on all sides, for a total of about 1 1/2 hours.

During the roasting process, baste with gravy frequently to prevent the meat from drying out.

Remove the must roast from the oven and serve hot.
