For the caramelized peaches with vanilla ice cream, first halve and pit fresh peaches. Peel off the skin as desired.

Heat butter in a pan, sprinkle in sugar and caramelize, stirring repeatedly. Deglaze with a dash of orange juice as well as Cointreau, add lemon or orange zest and toss in the peaches. Season with a good pinch of cinnamon and cloves.

Let the peaches steep briefly in the pan. Arrange on plates, drizzle with sauce and garnish with ice cream and whipped cream. Serve. At the table, sprinkle the caramelized peaches with cognac and ignite it.
