For the pumpkin curry, peel the onion and pumpkin and cut into pieces of about 2 cm. In a deep pan (wok) sauté the onion in a little olive oil.

Add curry powder and stir-fry briefly. Add the pumpkin pieces and pour in the coconut milk. Bring to a boil and cook, covered, for a few minutes until the pumpkin pieces are cooked.

Add a little water if needed. Season to taste with lemon or lime juice, salt and pepper.

Prepare noodles according to package instructions and serve with the finished pumpkin curry.
