Instructions:

For the sauce, sauté the garlic in the oil. Chop the toast and add it to the sauce. Prepare a paste with the remaining ingredients in the cutter.

Score the fat layer of the duck breasts crosswise, season. Roast the meat, fat layer down, in a coated pan for five to seven minutes. Turn and roast on the other side for another four to five minutes. Cover and place in an 80 degree oven for twenty minutes.

Extinguish the roast with orange juice and boil the whole thing down to 2 tablespoons (for 1 dl initial quantity). Pour in the chicken stock. Add the sauce paste and heat while stirring.

Add a little chicken stock as needed until the sauce reaches the desired consistency.

Cut the duck breasts into slices and serve the sauce with them.

Tip: This sauce is also great with duck or possibly goose. If desired, mix the fresh liver with the ingredients for the sauce.
