Instructions:

Wash the chard, cut off the ends and remove the thick white stalk in the middle. Cut the chard into strips about 1cm thick.

Bring a pot of water to a boil, add a pinch of baking soda (this will keep the chard juicy green) and blanch the chard in it for about 2 minutes.

Peel the onion, cut into fine cubes and fry briefly in oil.

Peel the potatoes, boil them and mash them finely with a fork or a potato ricer.

Add the chard and onions to the potato mixture and add the eggs, breadcrumbs and flour. Season well with salt, pepper and a pinch of nutmeg and mix everything together. With wet hands, form dumplings from the mixture.

Bring salted water to a boil and simmer the chard dumplings on low heat for about 15-20 minutes.
