Put about a third of the flour in a bowl, make a small depression and crumble the yeast between your fingers.
Sprinkle a pinch of sugar and pour 2-3 tablespoons of lukewarm water over it. Sprinkle some flour over it, cover the bowl with a kitchen towel and let it rest in a warm place for 20-30 minutes.
Now mix the remaining flour with the pre-dough and incorporate enough lukewarm water to make a smooth, pliable dough. To do this, knead the dough vigorously with the heels of your hands for a long time.
Cover the dough again and let it rise for at least 45 minutes until it has approximately doubled in volume.
Preheat oven to 200 °C and coat baking sheet with lard. Knead the dough again vigorously and shape it into a loaf. Place on the prepared baking sheet and bake the Balearic bread in the hot oven for about 1 hour.
