Peel carrots and potatoes and cut into slices, while 2 carrots cut into fine cubes and put aside. Boil water, vegetable soup with the carrots and potatoes and cook. Peel the ginger and cut into fine cubes and add to the carrots- potatoes form. Pre-cook the duck meat in the microwave, perhaps freeing it from the bone and then removing the skin. Cut the meat into cubes and put aside. Once the carrots are cooked, blend everything together with a blender until coarsely pureed or as desired. Then add the duck meat and blend repeatedly. Add the carrot cubes to the stew just before the end, so that they still have bite. Season to taste with soy sauce and perhaps pepper and a pinch of sugar. Serve sprinkled with parsley.
