Clean cauliflower, cut crosswise in the middle and cook in boiling hot salted water for 10 min. Boil eggs for 10 minutes, peel and cut into cubes. Cut ham into cubes as well. Boil the roux, add milk, stir and let it boil. Simmer for 5 minutes, season with salt, sugar, pepper, nutmeg.

Add the chopped kitchen herbs together with crème fraîche and juice of one lemon to the sauce form.

Put the cauliflower on a platter, pour the sauce over it and sprinkle with ham and egg cubes.

To cut back cabbage flavor, replace 1/3 of the cooking water with milk.

Our tip: As an alternative to fresh herbs, you can use frozen ones – they also stand out for their fresh taste!
