Rub turkey breast well with salt and season to taste. Cut leek into rings, carrots into slices. Place the vegetables in a well-watered Roman pot and add a small amount of water. Place the turkey breast on top. Close the pot and put it in the oven at 200 °C for about 75 minutes. After about half an hour reduce the heat to 150 °C.

Then pour the sauce through a sieve into a saucepan. Brush the top of the roast with 1 tsp honey and cook repeatedly for about 15 min at 200 °C without a lid, so that there is a nice crust.

Season sauce and thicken with a little sauce binder.

Tip: Always use aromatic spices to refine your dishes!
