For the lime soufflé, grate the skin from one lime and add to the curd in a bowl. Squeeze the lime and add the juice to the curd. Add 4 tablespoons sugar and the 4 yolks, all mix nicely.

Beat egg whites with a pinch of salt until stiff and fold into the mixture. Cut the second lime into thin slices. Grease 6 ramekins or small glasses with butter and sprinkle with breadcrumbs.

Place a thin slice of lime in each glass, divide the mixture among the glasses – they should be no more than half full – and cover each with a slice of lime.

Put a teaspoon of brown sugar on each. Bake in a preheated oven at 160 degrees for about 15 minutes. Serve while still hot!
