Mix the flour, milk, egg yolks and salt to make a pancake mixture, then carefully fold in the beaten egg whites and sugar, followed by the blueberries.

Melt the butter in a pan with a heavy bottom and spread it all over the bottom of the pan. Pour the Schmarren dough and bake, turning once, either at medium heat on the stove or at about 200 °C in the oven until golden brown.

Then tear the finished Schmarren into many small pieces and serve sprinkled with powdered sugar. It goes well with stewed plums.
