For the chocolate truffles with cognac, melt the chocolate in a pot in a water bath. Add the coffee and whipped cream and let it melt, covered. When the chocolate has melted, remove the saucepan from the water bath and gradually stir in the butter.

When the mixture is smooth and glossy, stir in the cognac and gradually mix in the egg yolks. Chill the mixture for at least 4 hours. Spread the cocoa powder on a plate and, using a teaspoon, prick small balls from the chocolate mixture and roll them in the cocoa powder. Chill the finished chocolate truffles with cognac again before serving.
