Mix well all the ingredients for the omelet dough. rest for half an hour.
Bake omelets in the hot clarified butter. Put a slice of ham in each omelet, fold the omelets twice. Slice the cheese, layer the omelets in a baking dish, evenly spreading the cheese in between.
For the sauce, bring the cream to a boil, add the grated cheese while stirring. Season with pepper, nutmeg and herbs and pour over the omelets.
Bake in the 250 °C hot oven for about 8 minutes.
Our tip: If you like to cook with fresh herbs, it’s best to get kitchen herbs in pots – that way you’ll always have everything on hand!
