Cut the peeled celery and apple (with or without peel) into fine strips and sprinkle with lemon juice. Mix the yogurt with salt and pepper until smooth. Peel the mango, remove the seeds and cut the flesh into fine slices. Marinate with honey and a little lemon juice. Roast the pumpkin seeds in a coated pan without fat until they are nice and plump. Arrange the celery crudités on plates, add the mango slices decoratively and sprinkle the pumpkin seeds on top.
