Separate eggs. Stir flour with salt, vanilla sugar, milk, lemon zest, egg yolks and rum until smooth. Whip egg whites to stiff peaks and fold in carefully. Heat clarified butter a tiny bit in an ovenproof frying pan on the kitchen stove and pour in the batter about 1 ½ cm thick. Bake a little, spread the blackberries evenly on the dough. put in the oven preheated to 200 degrees. After a few min turn the dough to the other side and continue baking. When the dough becomes dry on the top, add about 20 g of butter on the side of the pan all around. Tear the dough into pieces using two forks or shovels, sprinkle with granulated sugar and caramelize. Mix all the ingredients for the honey yogurt. Serve the pancakes with the honey yoghurt on plates, sprinkle with a little powdered sugar and cinnamon, garnish with lemon balm.
