Instructions:

Make a rhombic incision in the skin of the duck breast fillets. Season fillets with salt and pepper and fry skin side down in hot oil for 2 to 3 min on 3 or automatic heat 12.

Peel the mangos, cut the flesh from the stone and cut into cubes. Place the fillets skin side up on a baking tray and roast in the heated oven until crispy.

Circuit: 220 to 250 °C , 2nd slide bar v. U.

180 to 200 °C , convection oven 15 to 20 min.

Degrease the roast, add the mango cubes. Season with ginger, curry and cayenne and extinguish with port wine and clear soup. Add gravy and cook, stirring, for 3 minutes on 3 or automatic heat 12. Season with orange peel.

Cut the meat into slices and serve with the mango sauce.

Serve with mashed potatoes and roasted pine nuts.
