Sliced Meat with Mushrooms

Remove the meat from the bone, rinse, dry and cut into tender strips. Clean and rinse carrots, tomatoes, mushrooms and spring onions. Cut tomatoes into wedges, carrots into slices and spring onions into rings.

Heat clarified butter. Sear the meat in it. Season with salt and pepper and remove. Sauté mushrooms in drippings. Sauté the carrots. Extinguish with a little water. Add creme fraiche and cook a little bit.

Add tomatoes, spring onions and meat. Sauté everything for about 5 minutes with the lid closed. Season to taste with salt and freshly ground pepper. Rinse parsley, chop finely and sprinkle on top.
