For the blue cheese sauce, place a small pot on the stove. Coarsely dice the esterkron and add to the hot pot.

Let it melt slowly while stirring. Stir in the whipped cream and bring to the boil briefly. Season the sauce with pepper and nutmeg (freshly grated). If necessary, season with a little salt.

If you like the sauce thicker you can thicken it with some sauce thickener or flour.
