For the curd napkin dumplings, first cut the de-barked toast bread into small cubes and soak in lukewarm milk.

Cream butter until fluffy.

Mix eggs and egg yolks into the bread cubes, add curd cheese and butter and season with salt, pepper and nutmeg.

Roll the mixture in a kitchen towel (or first in cling film, then in aluminum foil) and fix the ends with a splice.

Bring water to a boil in a saucepan, put in napkin dumplings and let steep for 30-35 minutes.

Lift out, roll out and cut into slices.

Fry curd napkin dumplings in hot clarified butter on both sides until golden brown.
