Instructions:

Season meat, fry in oil on all sides in a roasting pan. Add finely chopped onion, carrot and celery, extinguish with clear soup and wine. Add peppercorns, bay leaf and juniper, stew with lid closed. Add mushrooms, fold in flour with whipped cream, add cream cheese and season.

Cook broccoli in salted water until tender, drain.

Beat eggs with cornstarch, wine, whipped cream and spices on a water bath until creamy. Dry roast the almond flakes.

Serve the broccoli on the spot with the egg sauce and almond flakes sprinkled on top.

Serve with mashed potatoes or potato croquettes.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
