For beef strips with bean cream and tortilla chips, first heat sunflower oil in a spacious pan and fry the meat strips in it until hot all around, add shallots and fry briefly. Season with chili, cumin, salt and pepper. Add bean cream and stock and boil down briefly. The meat should still be medium in the core.
Fill into bowls, arrange tortilla chips on top and sprinkle beef with bean cream and tortilla chips with chili and coriander.
