For the currant nectar, place the currant in a large saucepan and sprinkle with 200 g sugar. Mash with a potato masher and let stand overnight.

The next day, put everything through the whisk (smallest perforation, then there are no seeds in the juice, but the juice still has some “figure” and is not quite thin).

Now boil this uncooked juice with the remaining sugar, skim well and after about 3 minutes cooking time fill into sterile twist-off bottles and seal.
