For Jamaican jerk spare ribs, first peel and squeeze the garlic. Cut the chili pepper into thin rings. If you want the spareribs to be less spicy, remove the seeds beforehand. Peel and finely chop the onions.

Mix the spices with salt and pepper. Add all other ingredients and mix well. Place the spare ribs in the marinade for at least 6 hours.

Lift out of marinade, drain (but save the marinade) and grill over indirect heat for about half an hour. Keep turning Jamaican jerk spareribs in between and brushing with marinade.
