Pancakes Au Gratin with Spinach and Salmon

Instructions:

1. stir eggs, milk and flour. Season with salt and nutmeg. Let dough swell in about 10 min. Finely dice onion and sauté in hot fat. Extinguish with clear soup and whipping cream, bring to boil. Mix cornstarch with 2 tbsp. water until smooth and thicken the sauce with it. Grate cheese and let it melt in the sauce. Season to taste with salt and freshly ground pepper. Chop the dill. Mix egg yolk and dill and stir into the sauce. Do not make more!

2. cut the pre-fried salmon into slices. Heat oil in a coated frying pan in batches. Bake 4 narrow pancakes from the dough in it, one after the other. Top with spinach leaves and salmon, roll up and place in an ovenproof dish. Spread the sauce evenly over the pancakes and bake in a heated oven (electric oven 225, convection oven 200, gas mark 4) for 10 minutes until golden brown.
