For the wild garlic pancakes, whisk flour, milk, eggs, mineral water and salt until smooth and leave to swell for half an hour.

In the meantime, wash wild garlic, shake dry and mash well. After the swelling time, stir half into the batter. Wash the chives, shake dry and chop.

Stir the rest of the wild garlic with cream cheese, chives, whipping cream to a thick sauce until smooth. Season to taste with salt and pepper.

Heat butter in a pan and fry pancakes in portions on both sides.

Cover the finished wild garlic pancakes with ham, spread the sauce on top and serve rolled up.
