For the cheese spaetzle, mix flour, eggs, water and salt to a firm dough and rub through a dumpling sieve into boiling salted water. If you don’t have a dumpling sieve, you can also use a teaspoon to put the dumplings into the water one by one (but the dumplings should be quite small).

Cook in boiling water until all the dumplings have risen. This takes about 5 minutes.

In the meantime, peel and chop the onion and sauté in butter or oil. Over low heat, add the gnocchi to the pan, mix with the grated cheese and cover to melt all the cheese. Serve the cheese spaetzle immediately.
