Rinse the potatoes, remove the skin and cook in salted water. In the meantime, peel and dice beets. Cut cucumbers into fine slices, peel and finely dice shallots, chop dill very finely.

Finely dice dill herring. Mix cucumbers, shallots and herring with 4 tbsp oil, vinegar and dill, season with salt and pepper. Season pork fish with salt, brown all around in remaining oil and cook in oven at 190 degrees (gas 2-3, convection oven 160 degrees) for 12 minutes. Boil milk and 20 g butter. Drain and mash potatoes, gradually stir in milk, season with salt, pepper and nutmeg. Heat the beet cubes in the remaining butter and mix into the mashed potatoes. Cut pork fish into slices. Serve the mashed beet and pork fish together and pour over the cucumber salad dressing.
