Instructions:

Heat the olive oil in a saucepan to 60 to 70 degrees G, use a roasting thermometer to determine the heat. Preheat the stove to 70 to 80 degrees.

Add the ginger, Szechuan pepper, rosemary, bay leaf, citrus peel and garlic to the oil form.

Season the tuna slices with salt and season with pepper, pour the warmed oil into an appropriately sized ovenproof dish and place the tuna slices end to end.

Cover with cling film and steam in the oven for 3o min.

Remove tuna, dry and season with juice of one lemon and pepper – serve.
