For the cream of chard soup, chop the stem end of the chard, wash the individual leaves and remove them from the leaf veins.

Chop the ribs into 2 cm wide strips, add to the soup with half of the leaves, season with pepper, salt and nutmeg.

Peel the onion, add to the soup and cook until soft, about 35 minutes. Remove the onion from the soup.

Finely puree the soup with a hand blender.

Knead butter with flour, form into small balls, stir into the boiling soup and cook for 5 min. until completely dissolved.

Fold in whipped cream, add Roquefort cut into pieces. Chop the remaining chard leaves into very fine strips and leave them to infuse in the cream of chard soup for another 5 minutes.
