For the asparagus goulash, remove the stems and seeds from the peppers, cut into rough cubes with the onions and sauté in butter. Deglaze with a dash of apple cider vinegar, salt, pepper and season with the coriander seeds.

Simmer on medium heat for about 15 minutes, then pour in the soup. Simmer for another 15 minutes until the sauce thickens a bit.

Mix the starch with some cold water and stir into the sauce. Bring to the boil again and puree with a hand blender.

Briefly steam the asparagus, cut into coarse pieces, in the sauce until crisp, season a little more if necessary. Boil boiled potatoes and serve with the asparagus goulash.

If you like meat with it, you can simply sauté a few slices of lung roast in a butter and herb oil mixture. The tender meat goes perfectly with the asparagus.
