Peel and finely chop the onion and garlic clove. Sauté in half of the oil. Add tomatoes with half of the juice and capers. Let everything boil and simmer over medium heat for 30 min. until a sugo is formed. Season strongly with iodized salt and freshly ground pepper. Rinse and dry the chops and season with iodized salt, pepper and sugar. In the remaining oil, fry the chops for 2 minutes on each side. Remove the chops from the roasting pan, place them in a large ovenproof dish and spread the sugo evenly over them.

Sprinkle with the cheese and bake in a heated oven (E:225 degrees /G:level 4) for 7 minutes until the cheese has melted. Serve with roasted potatoes.
