Cannelloni with Vegetable Filling

Instructions:

For the cannelloni with vegetable filling, first prepare the filling. Cut the vegetables, onion and garlic into small pieces (important, otherwise the filling will not fit into the pasta) and sauté in olive oil. Add the tomatoes at the end. Add salt and pepper.

When the vegetables are soft and lightly sautéed, transfer to a bowl. Cut the feta into pieces and mix with the vegetables. Season to taste.

For the sauce, chop the olives and capers and add to the tomato sauce. If you use unseasoned tomatoes, you can also add garlic and onion (possibly sweat them beforehand). Season the sauce with thyme, chili flakes, salt and pepper.

Fill the cannelloni, place in a baking dish and cover with the tomato sauce. Top/sprinkle with mozzarella or other cheese. Bake in the oven for about 30 minutes at 200 °C (convection oven 170-180 °C).
