Instructions:

Remove the exterior from the pineapple and cut into slices or (in the case of canned pineapple) drain the pineapple.

Spread a greased mold sprinkled with sugar with rusks. Place the pineapple on top.

Mix cornstarch with baking powder and sift. Separate the eggs. Beat egg yolks with sugar until creamy, fold in cornstarch and yogurt. Whip egg whites to stiff peaks, fold in as well. Spread the mixture on the pineapple layer and sprinkle with sugar.

Bake the soufflé in a 200 °C oven on the lowest shelf for about 35 minutes. Serve immediately.

Tip: The higher the fat content in the yogurt, the more aromatic and creamy the result!
