Fish Fillet with Mediterranean Vegetables

Instructions:

For the fish fillet with Mediterranean vegetables, preheat the oven to 200°C top and bottom heat.

Finely chop the chili pepper and garlic, cut the remaining vegetables into bite-sized pieces.

Place vegetable pieces in an ovenproof dish and mix with garlic, chili, tomatoes in pieces, lemon juice and zest, raisins, herbs and maple syrup.

Season with salt and cook, covered, in the oven until the potato pieces are tender (about 1 hour).

Meanwhile, rinse the fish fillets, pat dry and season with salt and pepper on both sides.

After about 1 hour, remove the pan from the oven, place the fish fillets on top of the vegetables and return to the oven for another 15 minutes or so.

Before serving, sprinkle the fish fillet with Mediterranean vegetables with fresh herbs.
