For the cream filling, mix the grated cheese with ricotta, cream cheese, Tabasco sauce and salt. Pour the mixture into a piping bag and pipe onto the ham leaves. Roll up tightly and place 2 rolls on each plate. Boil the asparagus tips in salted water until al dente, rinse in cold water and drain. Marinate with sunflower oil, balsamic vinegar and salt and place on the rolls. Marinate the salad with house dressing and arrange all around. Finish with sliced truffle.
