Clean the zucchini and grate coarsely. Chop kitchen herbs. Crush garlic. Stir vinegar with salt and pepper, add garlic and herbs. Finally, add olive oil. Pour the marinade over the zucchini, mix, let sit a little, then season with sugar.
Clean and rinse the lettuce, drain well and spread the leaves in 4 salad bowls. Add zucchini and garnish with herbs of choice.
