Rinse lemons, grate. Set aside. In a baking bowl, mix the butter with the sugar. gradually add the salt, vanilla, grated almond kernels, one egg and 200 g of flour. Mix and add the second egg and the remaining flour. Stir in the grated lemon zest. Cover with cling film and rest in the refrigerator for at least 1 hour.

Form two balls from the dough. Roll out the dough to about 1 cm thick (do not press too hard) and cut out two circles with an upturned baking bowl. Form the galettes on a lightly buttered tray and rest in the refrigerator repeatedly for 20 min. Preheat the stove to 150 °C (gas mark 5). Separate the last egg. Mix the egg yolks with 1 tbsp water and brush onto the galettes.

Bake for 45 minutes. Cool before serving.

Before baking, hide a bean and carve patterns into the galettes with a fork or kitchen knife, respectively.
