For the almond poppy seed cake, first separate the eggs. Beat the egg whites with a squeeze of lemon juice until stiff. Mix egg yolks, powdered sugar, vanilla sugar and poppy seed oil until foamy.

Mix rum, grated almonds and wholemeal spelt flour into the yolk mixture. Carefully fold in beaten egg whites. Spread the mixture into a greased and floured loaf pan.

Mix poppy seeds, rum, milk and red currant jam. Pipe poppy seed filling into center (long side) of cake mixture, pressing down slightly. Bake at medium heat.

Let the almond poppy seed cake cool and turn it out.
