For the Älplerflädlesuppe, mix the flour with milk, eggs, salt, pepper and grated cheese in a bowl to make a thin pancake batter. Stir a little oil or melted butter into the batter.

Heat a little oil in a pancake pan, pour in a little batter, swirl pan so that batter is evenly distributed, and after turning once, bake one pancake at a time. Let pancake cool, roll up and cut into fine strips.

Bring the soup to the boil, arrange in preheated cups, spread the pancakes in it and sprinkle the Älplerflädlesuppe with chopped chives before serving.
