Instructions:

Beat butter until creamy, add sugar, mix well.

Add molasses and syrup, as well as milk, spices and sherry.

Mix well. Sift cream of tartar with flour and add alternately with beaten eggs to butter-sugar mixture form.

Add orange juice and grated orange peel, as well as the dissolved baking soda and raisins. Mold into a well-greased pan (12 x 9 x 3 inches, roughly equivalent to 30 x 23 x 7, 5 cm).

Baking time: The original recipe calls for 350 °C.

Converted to our unit of measure, the heat should be 180 °C (similar to honey cake). Preheat the oven moderately and bake for 45 to 50 minutes.

The unit of measure in the original American recipe is cups, which is roughly equivalent to the following units in English: 1 cup flour = four ounces = about 120 g, 1 cup fat = eight ounces = about 240 ml.

Tartar and baking soda can be replaced by a packet of baking powder, as this consists of carbonic acid sodium and tartaric acid potassium. Honey was used instead of molasses. All of the slightly more “exotic” baking ingredients are available in large supermarkets or possibly department store food sections.

Tip: Always use aromatic spices to enhance your dishes!
