Cut the Emmental cheese into even slices. Drizzle with the must, then season with fresh ground pepper and paprika. Marinate for about an hour.

Turn the cheese slices in the flour to the other side. Mix the eggs with the cream.

Pull the cheese slices through the egg and turn them in bread crumbs to the other side. Tap off any excess breadcrumbs. Then pull the breaded cheese slices through the egg and breadcrumbs again, this is important because otherwise the cheese will run out during frying.

Fry the cheese slices in enough hot butter until golden brown. Bring to the table immediately.

Tip:

As a side dish, a nut salad with chopped egg goes well with it.
