For the apple casserole with snow cover, preheat the oven to 200 degrees. Peel, quarter and core the apples. Boil for 3-5 minutes in 4 tablespoons of water until soft and puree with a hand blender.

Stir in 40 g sugar and when the apple mixture has cooled down a bit, stir in the egg yolk. Cut the white bread slices into quarters and dip them into the melted butter.

Then line a baking dish with the bread pieces. Spread the apple mixture on top and bake everything in the oven for 15 minutes. Then remove the dish from the oven and reduce the heat to 170 degrees.

Beat the egg whites with salt until stiff and carefully stir in 90 g of sugar. Spread the egg white mixture on the apple casserole and sprinkle the remaining sugar on top.

Bake the apple casserole with snow hood in the oven for another 4 minutes until the snow hood is golden brown.
